I found a diabetic recipe for oatmeal cookies that I printed out a long time ago. I have no idea where I got it. I was down to one banana, so I had to improvise and add blueberries in. The original recipe called for regular oats, but I was out, so I used instant.
Lazy Oatmeal Cookies
1 banana
¼ cup whole milk
5 packets Quaker Weight Control Cinnamon instant oatmeal
1 stick butter
1 packet Splenda or Altern
2 containers Motts Natural Harvest Blueberry Delight (found in small containers in the applesauce section)
1 packet raisens
Mix ingredients and spoon out onto greased baking sheet. Pat cookies flat with a fork. Place in a preheated 350 degree oven for 12 to 15 minutes.
Thanks! I don't think I have enough instant oatmeal but I do have lots of regular quick-cooking oats. I do like your substitution of the applesauce, though...we have that exact flavor in the cupboard. Mmm.
