Default Lentil Soup with Chicken and Spinach

I found this recipe in a runner's magazine a few years ago, and it's fantastic.

1 can of Lentil Soup - I try to find an organic brand that "looks" good, but use Progresso when I'm in a pinch
sliced, cooked chicken - you can use something like Tyson's grilled chicken strips, or make your own/use leftovers from something else
baby spinach

Heat up the soup and add the chicken. Once the chicken has been heated through, add the baby spinach and simmer on low until the spinach wilts. I usually have to add a little water or chicken stock to the soup to thin it out and make it less of a stew.

This is really good with a couple slices of whole grain toast.
