Default Lo-Carb, Lo-Cal Easy to Prepare Sheperds' Pie

This is DBF's recipe, but it is SO good, I had to share. Because we use at least 95% Lean Ground Beef, we eliminate a lot of saturated fat and because we use cauliflour instead of potatoes, we eliminate a lot of carbs.

Seriously - this is so easy, and so tasty and super-filling.

Sheperd's Pie
Serves 8 with hefty portions


Ingredients

2 Tablespoons Butter
1 Large Yellow Onion, Chopped*
3 Cloves of Garlic, Minced
1.5 lbs Xtra Lean Ground Beef (95% Lean preferred)
16 oz. Can Crushed Tomatoes, Drained
3 C. Green Beans, Chopped into Bite-sized Pieces*
4 C. Cauliflour Florets chopped into bite-sized pieces*
1 Egg, beaten
1/4 C. Parmesan Cheese, Shredded or Grated
*Can use frozen vegetables which are pre-cooked (you must thaw them or heat them in the microwave), or steam these veggies if you're using fresh.

Method
1. Preheat oven to 400F.
2. Heat 1 T. Butter in a large sautee pan
3. Sautee Onion and Garlic until translucent
4. Add Ground Beef to pan, cook until thoroughly brown.
5. Add ground beef, onion and garlic mixture to a large casserole dish.
6. Layer crushed tomatoes ontop of ground beef.
7. Layer green beans on top of tomatoes.
8. Add cauliflour, a bit of water, remaining 1 T. of butter and parmesan cheese to a blender and or mixer and whip until smooth.
9. Spoon cauliflour puree over green beans.
10. Brush the top of the casserole with the beaten egg.
11. Bake for about 40 - 45 minutes or until done.

Fat: 10 g
Carbs: 13 g (5 g Fiber)
Protein: 22 g

According to
