Default looking for easy quick casserole kind of meals

I am stuck in a rut of making the same things over and over. Rice A Roni, ham and noodle casserole, meatloaf, brats or italian sausage, take out...LOL

I am looking for easy things that are made with things from the cabinet...like my ham and noodle casserole...egg noodles, 1 egg, 1 cup of sour cream, italian bread crumbs, parmasan cheese and ham. mix the gooeys together and pour over the noodles sprinkle some more crumbs and you cook 350 until it's done usually 30 minutes. easy!

So I am looking for some new 5 ingredient things that are quick and easy to toss together in a pinch last minute.

Got any good ideas?

Turkey or Chicken Tator Tot Casserole
Preheat Oven to 350

-2lbs Tator Tots
-1 can peas
-Leftover Turkey or Chicken (broken up & enough to cover pan)
-1 can cream of mushroom soup
-1 can cream of chicken soup
- grated cheddar cheese (enough to cover pan)

Cover bottom of cake pan with tator tots. Drain the peas and spread them evenly over tots. Add a layer of turkey or chicken on top. Mix together your cream of mushroom soup & cream of chicken soup with 1 can of water. Spread evenly over the top of turkey. Top with cheese to taste. Bake until cheese is starting to brown. (approx 30 min)



Chicken & Rice
Preheat oven to 400

1 can cream of chicken + 1 can of water
1 can cream of mushroom + 1 can of water
1 box (2 packets) powdered onion soup
2-3 cups of instant rice
4-5 chicken breasts

Brown chicken in skillet. Mix all other ingredients together in a casserole dish. Add browned chicken to mix and cover with mixture. Cover dish and bake for 30-45 minutes.



Meat Loaf Balls
Preheat oven to 400

2lbs ground beef
4 slices of bread torn into small pieces
2 eggs
1 large onion chopped small
Ketchup
4-5 potatoes

Combine ingredients in a large mixing bowl. Use as much ketchup as you need to make a good firm consistency. Form into tennis ball size portions. Place balls in large skillet and put about a tablespoon of ketchup on top of each one. Peal and slice potatoes into small/medium chunks. Place potatoes around meat loaf in skillet. Bake for 30-45 minutes.

DH's tuna cassarole:
1 or 2 cans tuna
salt and pepper to taste
block of white sharp cheese, shredded
1 can cream of mushroom soup
8 oz milk
egg noodles or wheat noodles
1/2 stick of butter

Mix all ingredients in a baking dish and bake at 350 till pasta is tender and cheese is melted.


Hamburger pie:
Stir all ingredients for a meatloaf, but squish it out into a glass pie plate. Top with french fries and ketchup and bake as you would a meatloaf.

Chicken Pot Pie - bonless skinless chicken breasts, 1 can of cream of chicken, 1 can of vegi-all and 1 pk of premade pie crusts (top & bottom). chunk chicken & brown mix in soup and veggies, stir. Put in bottom pie crust, spoon in chicken mixture, cover with top pie crust bake until crust brown. I throw in bay leaves for extra flavor!

Chicken for a crowd - bonless skinless chicken breasts, cream of what-ever soup, milk, sour cream and stove top stuffing. Chunk and brown meat add in soup, about 1/2 cup milk and 1/2 container of sour cream. Lay in baking dish. Prepare stove top as usual. Spread that over chicken mixture and bake until stuffing is crispy. About 1/2 hour at 350. I also sometimes add in one of our favorite veggies like peas or mushrooms to this mixture.

Egg caseroles are good also. (Breakfast for dinner or weekends) Depending on how many you are feeding... prepare eggs with milk (just like scrambled eggs) mix in what ever meat you want to and what ever veggies you like. Throw in caserole dish and spinkle with cheese. (You can make a great southwestern one with left over steak, onions, green pepper.) Throw in a little salsa too if you like it. Just remember the eggs really expand, so don't fill dish more than 1/2 way. (WHAT A MESS!!) LOL

A friend just gave me this recipe and it is yummy!

Easy Beef Stroganoff

1 Tbsp butter (can use olive oil)
1/2 cup diced onion
1 (4 oz) can sliced mushrooms, drained
1/2 tsp minced garlic (or 1 clove)
2 (17 oz) pkgs Tyson (can use Hormel) Beef Tips with gravy
1 1/2 cups sour cream
1/2 cup dry white wine
Noodles or rice, cooked

Melt butter, add onion and garlic and simmer 5 minutes. Add beef tips and gravy and simmer 6-7 minutes. Add in mushrooms. Combine wine and sour cream. Add to meat mixture and simmer 5-6 minutes. Serve over rice or noodles.

I don't understand the directions for the meat loaf balls. Does that mean stick the skillet right in the oven and bake it in there? Or simmer on top of the stove?

Sorry, it means stick the skillet in the oven. Cast iron skillet. I should have been more specific. I always use cast iron so I don't think about it. If you don't use cast iron you can make it in a cake pan as well.

It's always a big hit around here. Everytime I've fixed it everyone loves it. I wish I could be more specific about the amount of ketchup, but I don't measure. It's just how my grandma always made it.

I thought I couldn't cook when I was first married because my food didn't taste a thing like Mom's. Turned out I just needed a good set of cast iron frying pans. I love my set! I got it from KMart, but didnt get the seasoned set. Wish I had, it took a long time to get them seasoned.

Jash- My MIL told me about getting used already seasoned cast iron skillets at garage sales and I thought to myself YEAH RIGHT!!! LOL! So, I went to K-Mart and got the Martha Stewart set that was on sale and thought nice new cast iron skillet set, but they weren't seasoned so it came with instructions how to season them, OH MY!! FORGET IT! I got a set and never cooked in them. MIL was right get the ones that are nice and seasoned and from grandma's kitchen lol! I made a mistake when I was at her house back in 1999 I saw this greasy skillet sitting on her stove everyday and thought GEEZ why don't she wash that pan and I washed it, then my husband said NO, you didn't wash it did you and I said YES!!!! It was awful lol!

Yep, lol, when I was a kid I tried scraping the "junk" off of mom's skillet and she had a fit. I didn't believe her that it was supposed to be like that, lol. She did wash them though, but DH insists we not wash ours. Yeah, right, I'm too OCD for that! It has taken over 5 years to get mine seasoned. One took longer and DH threw it out in 2003 because he didn't think I would ever get it seasoned. I was so upset! If I ever get a new set it will be preseasoned!

How I reseason mine now is to brush the bottom and sides with lard or butter or olive oil and put it in the oven on 500 for an hour or more. It will smoke LOTS so keep the fans on or the smoke detector will go off. It does stink, but it works.

Something quick and easy that DH actually really likes

Apple Pork Chop Casserole

boneless pork loin chops (I use 4)
vegetable oil
3/4 cup water
1 tablespoon butter
1 apple, cored and chopped
2 tablespoons raisins
Box of Stovetop stuffing mix, whichever flavor you like (Savory Herbs here)
1 can condensed cream of mushroom soup (or cream-of-whatever)

In a skillet, brown pork chops in oil for about 5 minutes on each side. In a saucepan, combine the water, butter, apple and raisins; bring to a boil. Stir in stuffing mix. Remove from the heat; cover and let stand for 5 minutes. Fluff with a fork.
Transfer to a greased shallow baking dish. Top with pork. Spoon soup over meat and stuffing. Cover and bake at 350 degrees F for 30-35 minutes.

Wow I'm drooling. LOL

Hey has anyone heard of a casserole that contains ground beef and canned biscuits? DBF was telling me that his mom used to make something like that but he couldn't remember what was in it. He said no vegetables were in it, although I don't believe him.

I found a few it might be (if you leave out the veggies) from a very old Better Homes and Gardens Ground Meat Cookbook:

Quote:
Biscuit Hamburger Bake

In skillet cook 1.5 pounds ground beef and .5 cup chopped onion till meat is brown. Drain off fat. Stir in one 10.5 ounce can condensed cream of celery soup; 1/3 cup milk; 1/2 teaspoon dried oregano leaves, crushed; and dash pepper. Heat to boiling. Turn into a 8.25x1.75 inch round ovenware cake dish.

To prepare biscuit, add 1/2 cup milk to 1 cup packaged biscuit mix. Stir with a fork forming a soft dough; beat 15 strokes. Spread over hot meat mixture. Bake at 450 for 15 minutes or till biscuit topping is browned. Spread biscuit with 1/2 cup dairy sour cream. Sprinkle with 1 tablespoon shredded Parmesan cheese and a little snipped parsley. Bake 2 minutes longer. Makes 6 servings.

OR

Western Casserole
1 pound ground beef
1 16 oz can whole kernel corn, drained
1 16 oz can red kidney beans, drained
1 10 3/4 oz can condensed tomato soup
4 oz sharp process American cheese shredded
1/4 cup milk
1 teaspoon instant minced onion
1/2 teaspoon chili powder
1 package refrigerated biscuits (10 biscuits)
2 tablespoons butter melted
1/4 cup yellow cornmeal

Brown beef in skillet. Stir in corn, beans, tomato soup, cheese, milk, onion and chili powder; bring to boiling. Turn boiling mix into 2 quart casserole. Bake, uncovered at 400 degrees for 10 minute.

Dip the biscuits in melted butter, then cornmeal. Place around edge of boiling hot casserole mix. Bake 20 minutes longer, or till biscuits are golden. Makes 5 or 6 servings.

OR

Beef and Biscuit Skillet

1 pound ground beef
2 teaspoons instant minced onion
1 10 3/4 oz can beef gravy
1 10 oz package frozen mixed vegetables
1 package refrigerated biscuit (6)
1/4 cup shredded sharp natural cheddar cheese
Paprika

In a skillet brown meat with onion; drain off fat. Stir in gravy and 1/2 cup water. Add 1/2 teaspoon salt and frozen vegetables, breaking apart. Bring to boiling. Cover; reduce heat and simmer 10 minutes. Top with biscuit; simmer covered 15 minutes. Sprinkle biscuits with cheese; heat till cheese melts. Sprinkle with paprika. Makes 4 servings.
