Smile Looking for new casserole recipes: One pot meals

Hubby has decided since it is fall, he would like some casseroles, but hoping for something new, not ordinary. We already has the usual tator tot, chicken noodle, corn casserole, split pea and ham hock, pinto and ham hock, etc.

Anyone have any different kinds???? Tuna turns me off, so those are not going to be good for me. It doesn't matter how many servings, as I have been practicing saving each leftover serving in containers for his lunches. It is wonderful because he can have a good hot lunch at work (has a freezer and a microwave there) and I don't have to do any extra work.

Chicken, pork, beef, tomato, etc. They would all be great.

PS.....I have purchased those gladware (or what's on sale) containers. They are awesome. I can freeze the leftovers for him and if for some reason the container doesn't make it home to get cleaned before it molds, he can just toss it. I was getting so upset about the rubbermaid and tupperware, either he forgot to bring home, or they started to melt when they had things that got too hot and then left horrible stains. All of my containers had orange melt rings in them. Plus since they are cheaper, I can keep alot more in the freezer at one time. I would have a ton of rubbermaid or tupperware and it would cost me way more. Anyway, thanks in advance for your help.

Here is a quick simple dish -

you will need
2 cans Jumbo crescent rolls
1lb - 2 lbs hamburger
brocolli pieces (frozen kind)
shredded cheese (as much as you like)

Brown hamburger and cook the brocolli
Layer:
1 can crescent rolls
Hamburger
Cheese
Brocolli
Cheese
1 can crescent rolls

Preheat oven to 425 - cook until crescent rolls are light to golden brown.

Have a good crockpot recipe if you would like one.

I will take crockpot recipes too, I have a wonderful 11 year old crock pot, got it as a wedding gift and it is well used and still working.

Also, soups would be great too.

I am trying to make meal plans for 2 weeks at a time, that way we don't just run out of money before payday. Meal planning is great because I can budget the meals in and figure out just how much we need for each meal. It is part of my "new me" and so far it is going well.

Oh yeah, carb, low carb doesn't matter as I am only counting the servings, and not the actual carbs or calories. It seems to be working for me in my battle to lose weight, and I find that I don't feel like I am missing any of my favorites foods.

Default here is the crockpot one

You will need

1- 2 lbs hamburger
Pasta shells (bowtie - any kind of small pasta)
2 cans spaghetti sauce
Mozzeralla Cheese
1 pkg. Pepperoni

Brown the hamburger and cook the macaroni - throw everything but the cheese in the crockpot and stir it up - Cook on high for about 2 hours or low for about 4 hours. When its about done throw the cheese on top and let it melt. Its just spaghetti basically - it is very good though.

Default Tamale Pie

1 onion, peeled and chopped
1lb ground beef (as lean as ya can get it)
1T chili powder
1t cumin
2 (14.5 oz) cans diced tomatoes (or a few fresh ones)
2c corn kernels
1 (2.25 ounce) can sliced black olives, drained (optional)
1/4t salt
1 large egg
1 large egg white
1 1/2c shredded reduced-fat Cheddar cheese
1c nonfat milk
1c cornmeal
1/2t baking powder

DIRECTIONS:

1- Over High Heat cook Beef, onion, chili powder, and cumin until beef if lightly browned and crumbley (about 8 minutes).

2- Add tomatoes (with the juices), corn, and olives. Bring to a boil. Add salt to taste.

3- In a bowl whick egg, egg white, 1/2c cheese, mailk, cornmeal baking powder and salt until well blended (it will be a thin mixture). Pour over meat mixture. Sprinkle with remaining cup of cheese.

4-Bake in 400* oven about 15 minutes until the top feels firm when touched.

*** this recipe is to make all in 1 skillet. Granted its not cooked in a traditional casserole pan, but it is a casserole. ***

Default Hamburger Pie

Ground Beef (as much as you like)
1 can tomato sauce
1 large bag french cut string beans (or corn)
mashed potatoes
shredded cheese

Brown the beef. Mix in tomatoe sauce. Put layer on bottom of casserole pan. Add a layer of green beans. Add a layer of mashed potatoes (as much as you'd like... we always used instant potatoes to get it done nice & quick). The sprinkle the top with a nice layer of cheese (or use cheese slices). Bake in oven until hot all the way through and top is golden brown.

*** we never wrote down a recipe for this so its all based on preference but growing up, we all loved this ***

I am just looking for umm, lets see, the not so traditional casseroles and ones that you ladies here have made. Like the corn casserole I posted here a few months ago, I like to try new things.

Baygirl, I absolutely love tamale pie, infact I have been searching for our family recipe, but no luck so far. I am definetly going to be trying that one. Yum.


Anyone have some non-traditional ones, maybe some ethnic ones???? We had a Tator Tot one last night using a golden mushroom instead of cream and I liked it much better. Anyway, keep them coming. I am saving them.

Campbells Soup has a great website (http://www.tastytuesday.com). You sign up and can search many recipes. The have 2 pages worth of casserole recipes.
Example:
Campbell's® Country Chicken Casserole
Prep. time: 10 min. Cooking time: 25
Serves: 5
Source: Campbell's® Quick and Easy Cookbook

Ingredients

1 can Campbell’s® Cream of Celery OR 1 can Campbell's® 98% Fat Free Cream of Celery Soup
1 can Campbell's® Cream of Potato Soup
1 cup milk
1/4 tsp. dried thyme leaves, crushed
1/8 tsp. Pepper
4 cups cooked cut-up vegetables, *
2 cups cubed cooked chickens OR 2 cups turkey
4 cups prepared Pepperidge Farm® Herb Seasoned Stuffing

Directions

MIX soups, milk, thyme, pepper, vegetables and chicken in 3-qt. shallow baking dish. Top with stuffing.

BAKE at 400°F. for 25 min. or until hot.

Tips *Use a combination of cut green beans and sliced carrots.

INGREDIENTS:
9 (6 inch) corn tortillas, cut in half
2 (10 ounce) cans enchilada sauce
2 cups sour cream
2 cups shredded Cheddar cheese
2 (4 ounce) cans diced green chiles
1 cup fresh corn kernels
1 pound skinless, boneless chicken breast halves - boiled
--------------------------------------------------------------------------------
DIRECTIONS:
Preheat oven to 350 degrees F (175 degrees C).
In a medium bowl, combine sour cream, cheese, chile peppers, corn, and chicken. Mix together well.
Dip 9 tortilla halves in enchilada sauce, and arrange them in the bottom of a lightly greased 9x13 inch baking dish. Spread 1/2 chicken mixture over the tortilla layer. Repeat.
Bake in the preheated oven for 25 to 30 minutes, or until center is heated through.

Here are a few from my files...

Bacon and Corn Casserole
6 bacon strips
1/2 cup chopped onion
2 Tbsp. flour
2 garlic cloves, minced
1/2 tsp. salt
1/2 tsp. pepper
1 cup (8 oz.) sour cream
3-1/2 cups fresh or frozen whole kernel corn
1 Tbsp. chopped fresh parsley
1 Tbsp. chopped fresh chives

Preheat oven to 350F.

In a large skillet, cook bacon until crisp. Drain, reserving 2 Tbsp. of drippings. Crumble bacon; set aside. Saute' onion in drippings until tender. Add flour, garlic, salt and pepper. Cook and stir until bubbly; cook and stir 1 minute more. Remove from the heat and stir in sour cream until smooth. Add corn, parsley and half of the bacon; mix well. Pour into a 1-qt. baking dish. Sprinkle with remaining bacon.

Bake, uncovered, for 20-25 minutes, until heated through. Sprinkle with chives.

Bacon and Tomato Casserole
6 oz. uncooked egg noodles
1 pound sliced bacon, diced
1/3 cup chopped green pepper
1/3 cup chopped onion
1 tsp. salt
1/2 tsp. dried marjoram
1/2 tsp. dried thyme
1/8 tsp. pepper
1 can (28 oz.) stewed tomatoes (any flavor variety)
1 cup (4 oz.) shredded cheddar cheese

Preheat oven to 350F.

Cook noodles according to package directions; drain.

In a large skillet, cook bacon over medium heat until crisp. Remove to paper towels to drain, reserving 2 tablespoons of drippings. In the drippings, saute' green pepper, onion, salt, marjoram, thyme and pepper for 5 minutes. Stir in tomatoes. Bring to a boil. Reduce heat; simmer, uncovered, for 10 minutes. Stir in the noodles. Add half of the bacon.

Transfer to a greased 2-qt. baking dish. Top with cheese and remaining bacon. Bake until cheese is melted.

Kielbossa and Cabbage
6 slices bacon
1/4 cup water
2 tablespoons white sugar
1 onion, chopped
2 teaspoons minced garlic
1/4 teaspoon crushed red pepper flakes
1/4 teaspoon seasoning salt
1 large head cabbage, cut into small wedges
1 pound Polish kielbasa


In a large skillet, fry bacon over medium high heat until browned, turning once. Remove bacon from pan, reserving drippings, and place on paper towels.

Stir water, sugar, onions, garlic, red pepper flakes, and seasoned salt into drippings. Add cabbage, and gently stir. Cover, and cook over medium heat for 10 to 15 minutes.

Add kielbasa to the pan. Cook, covered, for an additional 10 to 15 minutes. Crumble bacon over top, and serve hot.

This is not really a casserole, but it's easy to freeze and really isn't hard to make even if you do have to cook a few things before you actually bake the dish. Forgive me if these recipes sound like they are written for a first grader. My brother asked me to make him a cookbook of things we served at home, and he has very little cooking skills. so I write them up in simple terms. I'm just copying and pasting what I typed up for him.

Chicken with Wild Rice

4-8 boneless skinless chicken breasts
1 can cream of mushroom soup
1 cup milk
1 box Uncle Ben’s Wild Rice

Preheat oven to 350. Wash and drain the chicken breasts. Brown the chicken in a skillet with some olive oil. After it’s brown, add about 1/4 cup water to the pan and cover with lid for about 15 minutes to steam chicken.

Cook the wild rice according to the package directions.

When the chicken has cooked 15 minutes (or until it is tender), put the rice in a baking dish. Place chicken breasts on top of the rice. Open a can of cream of mushroom soup. In a small bowl, mix the soup and 1 cup of milk together. Pour this over the chicken and rice.

Bake at 350 degrees for about 20 minutes or until soup has thickened and browned and chicken is tender. If it needs more cooking time but the top is too brown, make a tent of aluminum foil and lightly cover the pan to finish cooking. This will keep the top from getting burnt while the chicken finishes cooking.

Here is another:

Chicken Enchiladas
About 4 chicken breasts or you can use canned chicken
1 can cheddar cheese soup (If you don’t find it with the soup, it’s sometimes in the Mexican section.)
½ cup sour cream
1 can Enchilada sauce (can use salsa too)
Shredded cheddar cheese
canned green chilies (optional)
Salt
Tortillas

Wash chicken and boil for about 30 minutes or until soft and tender. Be sure to check the pot on occasion while cooking to make sure the water isn’t boiling over.

Preheat oven to 375.

After chicken is cooked, cut it up into small pieces and put in a large bowl. Put in the green chilies (drain them first) if using, along with some salt to taste, the sour cream, and about a cup of cheddar cheese. If mixture looks dry, you can add sour cream a little at a time until it looks moist.

Warm tortillas in the microwave for about 20 seconds until they are soft enough to fold without breaking. Spoon the chicken mixture into the tortillas and roll them up into a log shape. You can fold over the top and bottom like an envelope and the filling won’t come out while cooking. Place the tortillas in a greased baking dish. After all of the tortillas are in the baking dish, spoon the cheddar cheese spoon evenly over the tortillas. Pour enchilada sauce over the soup. Sprinkle with more cheddar cheese.

Bake at 375 degrees for about 30 minutes or until it’s bubbly.

Note for you: Save the broth when you cook the chicken. You can freeze it to use later or throw whatever you have in your pantry in it to make soup.

The back of Bisquick boxes have some one dish meals too. I like their cheeseburger pie.

Default King Ranch Casserole

King Ranch Casserole

1 doz corn tortillas
2 c. cooked and shredded chicken
1 10 oz. can celery soup
3/4 tsp ground cumin
1 (10 oz) can Ro-Tel tomatoes
1 medium onion chopped
1 bell pepper chopped
1/2 tsp garlic powder
1 tsp chilli powder
1/2 lb. grated Cheddar cheese

Cut tortillas into strips. Scatter half of the strips on botton of a 2 qt. baking dish. Spread 1/2 chicken over tortillas. Mix chopped onion and bell pepper with soup and spreadh half over chicken. Sprinkle half of cheese over soup misture. Chop tomatoes and misx well with seasonings. Set aside. Make second layer with remaining tortilla strips, chicken and soup mixture. Pour seasoned tomatoe mix over all. Top with remaining cheese. Bake at 350 for 40 minutes. 4-6 servings.

Here's one of my weekly staples:

saute some garlic in a saucepan
add a cup of rice (I use brown)
2 cups of water
a can of beans, rinsed (I like white, pinto, etc.)
some chopped up mushrooms
some green veggies (spinach, broccoli, asparagus)
a couple cubes of veggie boullion

Cook until the rice is done. It's takes about 1/2 hour.
