Low-Carb Beef Fajitas
Makes 4 servings
Seasoned steak strips sauteed with onions and peppers served with cheese, sour cream and guacamole. Fajitas are naturally low-carb by simply eliminating the tortillas.
2 lbs sliced steak
1 cup sliced green bell peppers
1 cup sliced red bell peppers
1 cup sliced onions
2 tbsp butter
2 tbsp fajita seasoning
4 oz grated cheddar cheese
4 tbsp sour cream
4 tbsp gaucamole
1 In a large skillet, saute pepper, onion and fajita seasoning in butter until tender. Remove from skillet and cook beef slices until cooked through.
2 Add peppers and onions, mix and heat through. Remove from heat.
3 Sprinkle cheese over meat, serve with sour cream and guacamole.
