I am feeling the same as you.

When I starting low carbing I used to make so many omlettes, I am sick of them now! The good thing is, you can vary what you put in them. I like to add tuna, herbs etc., or bits of meat, lots of cheese.

I use 2 eggs, mix them, add some black pepper usually and a bit of water. Warm the pan up. If I want bits of bacon or sausages in the omlette, I cut them up and start them off in he pan to cook so they cook through properly. Then add whatever else you want into the mixture then pour it into the pan. Usually I finish it by putting it under the grill for a couple of minutes to make the top nice, or add cheese on top and grill it.

I posted a low carb pudding recipe on the FAST low carb meals tread. Check that out. I often eat it for breakfast and it's good for a four days or so. If you're eating out or wanting fast food, Hardees has a carb bowl that is wonderful!!

I use a small skillet let the pan get hot then add the eggs. As the bottom begins to set lift one end of the omelet with a spatula and tilt the pan so the uncooked egg part slides to the bottom (don't stir) I then run the spatula around the edges of the omelet to loosen and shake the pan a little. I then add the filling to one end of the eggs then gently fold over in half take off the fire and slide onto a pan.

I found some delicious low-carb high fiber, low calorie bagels- they are by Western Bagels- those are good to use for an egg sandwich but like you ssaid you are sick of eggs - you could put low-fat cream cheese on them or I like the soft laughing cow cheese spread too!

My attempts at making an actual omelet have failed miserably, so instead I just scramble the eggs and add everything I would put in the omelet to the pan and mix it all together, ham, peppers, tomatoe, olives, bacon, cheese all kinds of stuff. It works out perfectly and tastes just great!

I too am looking for something besides my version of omelets and hard boiled eggs for breakfast. UGH! Where do you girls find things like whole grain or whole wheat bagels or waffles or things like that? I live in a really small town so I know I won't find it here, but we go to Fargo alot and I could look there. Can you find them at the Walmart Supercenter or Super Target?

I'm trying to get back on track but it's hard when all I want is carbs! UGH! So I figure if I can get some whole grain/whole wheat carbs maybe I won't feel like I'm starving myself to death! HA!

You guys are lucky. At least you can eat eggs. I have a severe reaction to eggs so I can never have any

I have nothing to add to this one - but breakfasts are my worst meal - the Doc says I'm supposed to "eat like a queen" for breakfasts and "eat like a princess" for dinners - but - well - I'm a bit lazy in the mornings - already get up an hour early to get in exercise time and primping time - and quite honestly - can't/don't want to push it even EARLIER to make a big breakfast. For me - easy, tasy and healthy is the key - and FAST - but I'm having SUCH a problem getting all those things together for breakfast - easy, tasty, healthy and FAST. Just not workin'....

Hi Amanda! I so feel you on the small town thing. I see everyone posting all these delicious sounding foods that I have no way of getting without driving an hour and a half!! That's our closest SuperCenter! I'm on phase 1 of South Beach and am already feeling overwhelmed and bored with the food because I'm a picky eater already and then not having anything but a tiny, locally owned grocery store is killing me on trying new things that are allowed on phase 1.

My stomach is turning right now thinking about having eggs again in the morning. I'm thinking about heating up the 1/2 cup of purple hull peas that I have left over from tonight to eat instead, lol. I really need to expand my food portfolio, lol.

If you are in a hurry South Beach has a meal replacement bar (three flavors) that are very good, I like them better than the cereal bars. You can fine them near the protein bars at the different stores I have seen them in Walmart and Target as well as my grocery store.

We have to drive 1 1/2 hours to get to our nearest SuperCenter or large grocery store too. OH the joys of living in a small town. UGH! I'm wanting to find things like whole wheat waffles or pancake mix, I'm so hungry for a blueberry muffin but I want a good recipie that follows my diet but have no idea what that would even consist of! Is oatmeal considered a "good carb"? I feel like no matter how much research I do, I'm still stuck and confused! We try to stock up on groceries when we "go to the big city" but I don't know what I should be stocking up on. If anyone has any advice, I'm all ears!!!!

You know, I just eat whatever I want in the morning, whether or not it is considered "breakfast food". Although, my favorite is Ham and Cheese sandwich on toasted bread. If you use low carb bread, low fat cheese, etc. it might be a good option. I have even had tuna for breakfast!!

I like to have a smoothie in the morning.

i use about a cup of plain yogurt
handful of frozen, unsweetened berries
Soy milk
some ground flax

it's awesome and you can take it with you if you are short on time.

Can you find the flax at a normal supermarket or do you have to go to a healthfood store for that?
