Well, they aren't crackers persay, but if you take a 1 inch cube of cheese, or a cheese slice from a brick of cheese, you can melt it in the microwave for like a minute on high on parchment or wax paper until it is light brown and bubbly, pull it out and let it cool, and boom, crunchy cheese cracker. It really works!

Okay, just went bac and pulled up a post from a while back about these"crackers".
easy, easy, easy
1.Grab that big old hunk of cheese outta the fridge.
2. Cut of about a 1/4 inch slice and cut that slice in half to make square pieces.
3. Place on a microwave safe plate, I put parchament paper on mine to make it easy to peel off. But you can just put it on the plate because you peel them up before they could stick.
4. I microwaved 4 pieces on high for 1 minute and they where perfect. But I would play with the times as we all know microwaves vary. Just watch for them to get bubbly all through the middle and get a VERY slightly brown color.
5. Peel them up and let cool for 1 minute. They get crispy and lacy and they were perfect.
I used sharp cheddar and they were fine. I also tried a pre-wrapped slice of american cheese which didn't get as thin and lacy and which was much saltier, but will do in a pinch. I bet you could use almost any cheese that is your favorite.
You can also spice them up before you cook them, although I would avoid salty toppings.
I also saw on the net that you could do it on the oven at 350 degrees. Maybe slap some pepperoni on top as soon as you pull them out of the oven.

I'm confused now because The PCOS Diet Book says complex carbs are okay - I thought that meant stone-ground/wholegrain crackers were okay? I still only have 3 at a time (and savor them), but I'm wondering if that info is incorrect?

Just preference. Hey it can't hurt to try a new trick with food, right? I know I can't have crackers in the house without running the risk of eating a whole box. So, for willpower sake, I have the cheese I can make into a crunchy treat if I am dying for it without going nuts! lol

I love that idea for those cheese crackers. I'll have to try that sometime.
I use Wasa high fiber rye crackers. They have 5 net carbs a piece (and are big).
