Thanks for all the wonderful recipes, I just got a crock pot for christmas so I'll have to try them out.

Default Jambalaya

I made this one last week. My husband & I both loved it. Super easy!!

Slow Cooker Jambalaya

½# chicken breasts, skinless, boneless
½# andouille sausage ( I use andouille chicken sausage)
28 oz can fire roasted diced tomatoes
1 green bell pepper, chopped
1 stalk celery, chopped
1 cup low sodium chicken broth
2 tsp dried oregano
2 tsp laceName>OldlaceName> laceType>BaylaceType> seasoning
2 tsp cajun seasoning
1-2 tsp hot sauce
1 tsp dried thyme
2 bay leaves
1# frozen shrimp, thawed & cooked
2 c cooked brown rice

Combine all ingredients except shrimp and rice. Cover and cook on high for 3 hours or low for 7 hours.

spagoer-- that jambalaya looks delicious! I'm going to have to try that soon.


Just an FYI-- there's a great article on MSN Lifestyles today with 23 different Chicken Crockpot recipes. They aren't all low carb, but you can substitute a healthy whole grain carb if you wanted.


This is the one I'm making for DH tonight. I think I'll serve it with a salad.


Rosemary Chicken
Ingredients
Nonstick cooking spray
1-1/2 pounds skinless, boneless chicken breast halves or thighs
1 9-ounce package frozen artichoke hearts
12 cloves garlic, minced
1/2 cup chopped onion
1/2 cup reduced-sodium chicken broth
2 teaspoons dried rosemary, crushed
1 teaspoon finely shredded lemon peel
1/2 teaspoon ground black pepper
1 tablespoon cornstarch
1 tablespoon cold water
Lemon wedges (optional)



Directions
1. Coat an unheated large nonstick skillet with nonstick cooking spray. Preheat over medium heat. Brown chicken, half at a time, in hot skillet. In a 3-1/2- or 4-quart slow cooker, combine frozen artichoke hearts, garlic, and onion. In a small bowl, combine broth, rosemary, lemon peel, and pepper. Pour over vegetables in slow cooker. Add browned chicken; spoon some of the garlic mixture over chicken.

2. Cover and cook on low-heat setting for 6 to 7 hours or on high-heat setting for 3 to 3-1/2 hours.

3. Transfer chicken and artichokes to a serving platter, reserving cooking liquid. Cover chicken and artichokes with foil to keep warm.

4. If using low-heat setting, turn to high-heat setting. In a small bowl, combine cornstarch and the cold water. Stir into liquid in slow cooker. Cover and cook about 15 minutes more or until slightly thickened. Spoon sauce over chicken and artichokes. If desired, serve with lemon wedges. Makes 6 servings.

this isn't a crock pot recipe, but its really good

Take 2 or 3 frozen chicken breast
sprinkly a packet of hidden valley ranch dressing on it (the dry packet kind)
Cover the chicken breasts with strips of bacon
Then, cover with ceddar cheese
Bake for an hour (I usually by the big packs of frozen chicken breasts and use the temp. it gives on that) I think its around 350 or 400. I'll have to check.

This recipe is so good. the chicken comes out so moist its fantastic. The bacon isn't very crisp when it comes out though. If you like you might want to try to microwave it a little.

This is a great crock pot recipe as well:

4-5 Frozen chicken breasts
can of corn
can of black beans or black olives, I kind of like both in there.
jar of salsa
fat free cream cheese
** Note, my tip on the black beans is add them in about 4 hours into cooking otherwise they get mushy. Also I rinse the beans first, they have that creamy stuff in the cans and for this recipe it doesn't work so well.

Put frozen chicken breast in crock pot, I put some poultry seasoning on it. On top of that put everything, plus a little S&P and garlic seasoning, but hold the cream cheese. Cook on high for 4-5 hours, usually I cook it for 5 hours. The last half hour, put the cream cheese on top and just let it melt. UMMMM.....

Once it's done I shred the chicken and make brown rice. I eat it with tortilla chips, brand is Xochil (I think) they are in a brown bag, and very healthy. Made with healthy oils and wheat. Or you can eat it just as a dish, or in a burrito, or with chips -- my favorite!!!

It is so yummy!!!!
