Right, due to popular demand I have found some low carb curry recipes. Let me know if they are any good. Sorry - this is going to be a long post.....
LAMB CURRY WITH RED PEPPER
4tbsp extra-virgin olive oil
2 medium onions, peeled and chopped
1 garlic clove, peeled and finely chopped
2 small red peppers, deseeded and finely sliced
1 bay leaf
2 green cadamom pods
350grms lean lamb fillet, cuber
1tsp garam masala
1 slice fresh giner root, peeled and finely chopped
1 green chilli, seeded and finely chopped
1tbsp freshly squeezed lemon juice
200grm tin of chopped plum tomatos (not drained)
200ml lamb stock
4tbsp natural yogurt
1tbsp fresh corriander, finely chopped
pinkch of rock salt
black pepper
Heat the olive oil in a large, deep frying pan and saute the onions, garlic, red peppers, bayleaf and cardamom pods for 1-2 mins. Add the lamb and saute for a further 4-5 mins. Stir in the garam masala, ginger, chilli, lemon juice and tomatoes, and cook for 2-3 mins. Stir in the stock and simmer gently for 45 mins. Remove the bay leaf and cardamom pods, then stir in the yogurt gradually over low heat. Finally, add the fresh corriander, season to taste and simmer over low heat for a further 3-4 mins. Serve immediately, garnished with fresh corriander leaves and finely sliced red chilli.
CARB CONTENT PER SERVE: 16grms
CHICKEN TIKKA
300 grms skinless chicken breast, cubed
Marinade:
1/2 tsp chilli powder
1 garlic clove, peeled and finely chopped
2slices fresh ginger root, peeled and finely chopped
1/2 tsp ground tumeric
1/2 tsp ground cumin
1 shallot, peeled and grated
pinch of rock salt
black pepper
2tsp lemon juice
100ml natural yogurt
2tsp fresh coriander, finely chopped
Mix together the marinde ingrediants amd stir in the chicken. Cpver and leave for at least 3-4 hours (pref overnight)
GRill the marinated chicken under medium heat for about 20 mins, turning regulary
CARB CONTENT: 11 grms

Imogen, thank you, thank you!!! My Dh loves curry and I have been looking for a low carb recipe because I have to be careful about my diabetes. I just bought the IR diet book yesterday. Are the two recipes in your post ok for the IR diet? Dh promised he would do the diet with me so that I am not cooking two different dinners and he wants to drop about 30 lbs.
I want to cook him foods that he loves so that he doesn't feel that he is giving anything up by supporting me. Thank you for taking the time to type and post those recipes!

by IR I take it that is Insulin Resistant? I am IR so yes, I presume it is.
CHICKEN KORMA Serves 2
300 grms skinless chicken breasts, cubed
3 tbsp extra- virgin olive oil
2 green cardamom pods
1 medium onion, peeled and finely chopped
1 slice of fresh ginger root, peeled and finely chopped
I tsp ground cumin
1/2 tsp masala
1/2 tsp chilli powder
pinch of rock salt
black pepper
125ml natural yogurt
pinch of paprika to garnish
Heat 2 tblsp of the olive oil in a large frying pan and saute the chicken for 5-6 minutes, stirring frequently. REmove the chicken with a perforated spoon, place it in a casserole dish and cover.
Heat the remaining oil in the pan and add the cardamom pods, onion and garlic, and saute for 2-3 minutes. REmove from heat and stir in the ginger, cumin, garam masala, chilli powder and seasoning. Cook over a low heat for 2-3 minutes, stirring constantly. Stir in the yogurt gradually, simmer over a low heat for 2-3 minutes and return chicken to the pan. Heat through gently for 3-4 minutes, then serve.
Imogen, yes, I am sorry, I meant insulin resistance. Thank you for the wonderful spice filled recipes!! DH is thrilled and we can't wait to try them this week.

In case anyone was wondering about these recipes...
I made Chicken Tikka the other night and DH couldn't stop raving about it. He loved how the marinade made the kitchen smell and said the taste couldn't top it, then when he ate it he admitted he was wrong and it tasted every bit as good as it smelled.
I am making the lamb curry tonight, so I will see if he likes that one.
