I have been on a low glycemic / insulin resistant diet for the past month or so, and just want to recommend this recipe, which has been a staple. I add spices as suggested by some of the posters who responded to the recipe for extra flavor. It's really not bad, esp for those who are staying away from all real bread. Sometimes you just want to have a sandwich or to sop up some sauce, and the recipe rules for that.
sounds really good...do you happen to know about how many calories per slice it would have? It seems like it might be high, I know the flax meal i use has 90 calories for 2TBS i cant image using 2 cups but i guess it is spread over a whole pan.

I'm not sure, but the recipe there makes about 12 servings.
I am glad you asked though, bc I wanted to add that I don't recommend eating more than 1 or 2 slices per day, bc the bread is so high in fiber. You need to drink a lot of water with it too, to dilute the fiber.
But if your calorie count for flax is accurate, then the flax content alone per slice should be 120 kcal, if I calculated right. But SO MUCH of it is fiber, that it almost doesn't matter. There are not that many other ingredients (eggs and a bit of oil) ... so I would estimate 200 kcal per slice.
Yesterday I made a variation. I subbed 1 of the cups of flax with a cup of almost fully boiled red lentils. Also, I added a little less oil. Half of the oil was sunflower seed oil, half vegetable. Also used only 2 eggs and the rest were egg whites. Kosher salt and cracked pepper on top. it's actually really good this way, and seems like it has fewer calories.
