Low carb Mashed "Potatoes" (cauliflower) This is one that dh and I tried tonght, it is a substitute for mashed potatoes. I like it, it is not too cauliflower, but you can def tell it is not potato.
Mashed "Potatoes"
1 large head of cauliflower, tough stem removed, cut into florets
3 tablespoons sour cream or ricotta cheese (we used the sour cream)
1/2 cup shredded Cheddar cheese
1/4 cup grated Pamesan (not the kraft stuff, you find this near the cheese or in the deli cheese area)
1/2 teaspoon salt (we omitted)
optional - big pinch of ground cumin (we did not)
optional - chopped fresh parsley for garnish (we did not)
Put the florets in a steamer basket inside a large saucepan. Add an inch of water to the pan, cover, and bring to a boil. Reduce heat to a simmer and cook for 12 - 15 minutes, or until the cauliflower if just tender. Drain it very well on kitchen towels.
Puree the cauliflower in a food processor (or blender), then add the remaining ingredients except parsley and puree until smooth. Scoop the puree into a warm serving bowl and garnish with parsley if desired. Serve hot.
