[KYBluegrass drools like Homer Simpson...] These are sinfully good!!! Keep this one for Xmas time, but hide them or everyone will eat your cookies!
1 C coconut oil
1C butter, at room temp.
1 1/2 C splenda
1 tsp molasses
2 eggs
1 C ground almonds
1 C vanilla whey protein powder
1/2 tsp salt
1 tsp baking soda
1 tsp cinnamon
1 C rolled oats
1 C chopped pecans
Preheat oven to 350 F. Beat together the oil, butter, splenda until well combined, creamy and fluffy. Beat in molasses and eggs, combining well, then add almonds, protein powder, salt, and baking soda, scraping down the sides of the bowl, making sure all in combined well. Beat in cinnamon, rolled oats and pecans. Spray a cookie sheet with pam, and drop dough onto it by tablespoon, leaving room for spreading. Bake 10 minutes or until golden. Transfer to wire racks to cool.
Makes about 5 doz. cookies, each with 3 g carbs, and 4 g protein.
