Talking Low Carb Recipes

I just bought a really good low carb recipe book and I thought that Iwould post some of them here to share with fellow low carbing cysters! A couple I think sound fantastic and I plan to try very soon...

Jill Taylor's Fried Cheese Taco Shells:

1 x 8 - ounce (225g) bag of strong cheddar **do not use fat free cheese!**

Heat a small non stick frying pan over medium heat until hot. Add 1/2 cup (30g) of shredded cheese and fry until brown. Flip over and brown the other side. Do not overcook as it becomes dry and brittle. Light golden brown is ideal. When cooked, remove from the frying pan and place over a rolling pin covered with a kitchen towel. Use another folded piece of kitchen towel to mold the cheese into a taco shape, then put aside to cool. Always wipe the excess fat from the pan before you add more cheese, as it cooks better if it's dry.

Yield: makes 8 taco shells or rounds to cut up
Each has 114 calories, 9g fat, 7g protein, trace carbohydrate, nil fibre, trace usable carbs


Almond-Parmesan crust
Ideal for savoury dishes like quiche

200g almonds
75g grated parmesan
90g butter melted
1 tbsp water

In your food processor grind the almonds until they are the texture of cornmeal. Add the parmesan cheese and pulse to combine. Pour in the butter and the water, and run the processor until a uniform dough is formed - you may have to stop the processor and run a butter knife around the bottom edge of the processor bowl half way through

Turn out into a 25cm flan dish you have sprayed with oil to prevent sticking. Bake at 180 c, gas mark 4 for 10-12 minutes. Cool before filling.

Yeild: 8 servings
each contains 238 calories, 22g fat, 7g protein, 5g carbohydrates, 3g dietary fibre, 2g usable carbs

Cauliflower Rice:

1/2 head of cauliflower

Simply put the cauliflower through your food processor, using the shredding blade. This gives a texture that is remarkably similar to rice. You can steam this or microwave it or even sautee it in butter. Just don't overcook it!

Yield: around 500g - around 3 servings
Each has 5g carbohydrates, 2g of which will be fibre, usable carb count of 3g, 2g protein

well I had the cauliflower rice with a chilli last night and it was delicious! I highly recommend it!
