Default Low Carb Soup Receipes???


I love soup, but cannot eat the high carb campbells soup anymore.

Anyone have a good low-carb chicken soup receipe? I'm missing soup, and need some good ideas. I know I can use a boullion cube for the broth, but what can I add (other than chicken) for the ingreidents??

Just wondering.

Those boullion cubes are loaded with sodium, so be careful!

I use canned or boxed chicken broth if I don't have any real chicken stock on hand.

Onions
carrots
celery
parsnips or turnips
garlic
fresh herbs--sage, thyme, parsley, etc.

You can roast your garlic for amazing flavor. Just wrap a head of garlic in foil and roast it in the oven for about 45 minutes....YUM!

Use a wee bit of olive oil--heart healthy and again, great flavor.

I like to add mushrooms to my chicken soup. If you want a thicker, creamier soup, add some cream, or maybe coconut milk and lemongrass. I have just bought "500 more low carb recipes" by Dana Carpender from Amazon and it looks like being a winner. Also I use Allrecipes.com a lot.

do you like cauilflower? there are some awsome cau. soup recipes on the net,, they use cream to thicken,, you can add any veggies you like,,, me i don't like most so, i stick with the cauilflower and you add cheddar cheese.... yuppy.... suzanne summers has some good soup recipes also..
