It depends on how "formal" your dinner is, but here are some ideas for next time:
(1) Veggie burgers (without the bun for you), with grilled asparagus and mushrooms on the side.
(2) Vegetarian Fajitas. Vegetables: grilled broccoli, mushrooms, red peppers, onions, and garlic. Sauce: salsa, guacomole. Shredded Cheese. Refried Beans. Fake Chicken Strips. You can use tortilla shells for your family, and go without for yourself.
(3) Eggplant Parmesian. Perfect dish, because there are very few carbs.
