Low Fat: Classic Chicken Salad Classic Chicken Salad

Serves 4
1/2 cup fat free mayonnaise
2 tablespoons lemon juice
1/2 teaspoon salt
1/2 teaspoon black pepper
3 cups cooked skinless chicken breast, diced
2 celery stalks, washed, trimmed, diced
2 tablespoons chopped walnuts
2 tablespoons chopped parsley
1 teaspoon tarragon
1 teaspoon celery seed
2 medium delicious apples, washed, quartered, cored, diced
12 large romaine leaves, washed
In small bowl, combine mayonnaise, lemon juice, salt, and pepper.
In larger bowl, combine chicken, celery, walnuts, parsley, tarragon, celery seed and apple.
Add mayonnaise mixture and gently toss. Cover and refrigerate 10 minutes to chill.
Place romaine leaves on 4 serving plates. Scoop chopped chicken salad evenly on plates. Serve immediately
