Does anyone have a good recipe for low-fat date squares? I love date squares, but every recipe I've seen has tons (OK, maybe not tons...but at least a cup or so...) of butter in it.
How many servings does the recipe you've seen have. I know the one my mother makes is at least 16 servings. With a cup of butter, that's only 1 tablespoon per bar. With a lighter meal, it's not so bad.
I don't know about a low fat version. I've never come across one before. The crust would have to be reworked somehow.

Hahahaha! Ajani, my curiosity got the best of me and I googled it...the image that is...OMG! Kinda weird, but funny! :p
Anyway,
here's a recipe from the good ol' 1950 Betty Crocker cookbook that I have added dates to that is good and chewy and uses no butter at all!
This cooks in an 8 inch square pan.
WALNUT SQUARES
(I have added dates to this)
1 egg
1 cup brown sugar
1/2 teaspoon vanilla
1/2 cup flour
1/2 teaspoon salt
1/2 teasoon baking soda
1 cup chopped walnuts (maybe a bit less when adding dates)
chopped dates to taste
Beat egg until foamy. Beat in brown sugar and vanilla.
Mix together flour, salt and baking soda and add to egg.
Mix in the walnuts and/or dates
Spread into a well greased 8 inch square pan (8x8x2"). Bake until top has a dull crust. Cut into squares while warm, cool, then remove from pan.
325 degree oven
Bake about 25 to 30 minutes
Makes 16 two inch squares, although I like mine bigger!
