This is one of my own concoctions.. Very yummy!
4 whole wheat pita loaves (app. 8 in diameter)
1 package Hormel turkey pepperoni (tastes like the regular kind and only 2g fat for 8 slices!)
1 8 oz. package fat free shredded mozzarella cheese (I used the whole package)
1/2 cup shredded parmesan cheese
1 small can tomato paste
3/4 cup water
garlic, salt, pepper, oregano
To make the sauce:
Combine about 3/4 of the can of tomato paste with water until you reach desired consistancy and season to taste.
Use an air-bake pan or large pizza pan
Preheat oven to 400 degrees
Spread about 2 tbsp of sauce on each pita loaf. Layer with mozarella cheese, pepperoni, and an additional layer of mozz. cheese then sprinkle shredded parmesan on top.
Bake at 400 degrees for about 15 minutes or until cheese is melted and golden brown.
This carries my picky family's seal of approval!
