This is a low fat vegeterian dinner for all Okay so this has to be one of my favorite meals, it's easy, low fat and can make it in about 1/2 hour. I won't put quantities because well it depends on how many you are cooking for i only cook for 2.5 people so don't really need much. I hope someone tries this recipe and that it's easy to understand! Enjoy!

Ingredients:
Summer squash (green or yellow ), (or Mexican squash if they have it) *
1 can of corn (drained)
2 fresh red tomatoes
½ a white onion
Chicken bullion (optional)
Salt (to taste)
¼ cup milk (optional)
1 cup shredded cheese (could be mozzarella/cheddar) (optional)
Okay firs dice the squash, onion, and tomatoes in cubes.
Put a regular sauce pan on the stove at medium heat. Once it is heated add the squash to it with a little bit of water (not too much the squash will release it’s own as well), add the bullion and cover. Let the bullion melt in the water and move it around a little bit. After the squash changes color add the tomatoes, onions, and can of corn, stir all together and let boil for about 10 minutes. Once it is boiled and the squash is soft enough but has a little crunch to it turn heat off. While still on the burner add the milk and stir in, then add the chesses to cover the surface and place lid on the pan. Let sit for a while then it’s ready to serve. You can serve it with a side of rice or with tortilla chips and salsa….
* Just remember squash shrinks in heat.
