Default Low Low carb, low fat, high protein breads for breakfast (sugar free)

hiya cysters...........

I have found some great low low carb breakfast recipes from the carb addicts book....as some of you know, its easy to know that if we are to have high protein breakfasts ,it needs to be nothing "bready"...

guess what???
i found some "breads" substitutes...

heres one im making this morning...

cottage cheese muffins

1 tsp butter (or cooking spray) to coat muffin tin

2 eggs (no egg beaters, must be real eggs)
1/4 tsp cream of tarter
1/4 C. regular or lowfat cottage cheese
1 Tbs soy flour ( i used whole wheat flour)
1/2 packet sugar substitute

preheat oven to 300 deg./ coat or spray tin cups (makes 6)

seperate the whites from yolks. beat whites until frothy, add crm of tarter until stiff peaks form..

in medium bowl,combine yolks,cottage cheese,flour,and sugar subs.
mix well. add mixture to beaten egg whites, folding in gently.
fill each cup with batter 2/3 full.
bake until golden brown and they spring baack when touched with back of fork...(25-30 min)

remove and serve

-------------------------------------------------------------------

cinnomon "bread"

cooking spray or butter to coat sides and bottom of 4x7 in loaf pan.

4 eggs (no substitutes)
3/4 tsp crm of tarter
1/4 cup cottage cheese
1/2 tsp ground cinnomon
2 Tbs soy flour (or wheat,almond,etc..no white)
1 whole packet sugar sub.

seperate yolks from whites.
beat whites til frothy, add crm of tarter and beat until stiff peaks form.
in meduim bowl, combine cinnamon and flour, add yolks, cottagecheese, and sugar substitute.
mix well and dont over mix.
gently fold the egg yolk mix into egg whites.

pour the mix into coated pan and bake until loaf is brown and springs back with back of fork.
(40-45 min)

Jen, I would think that you could since most grocery stores have a natural foods section. I know that Fred Meyer (might be Kroger in other areas) has a natural food section that sells bulk items and they have it. I think I saw some in the natural food section in bulk in Carrs (Safeway) too. I buy a lot of things in the nat food bulk, like my spices, way cheaper, and sea salt.
