My Mood: Points: 856.58 Bank: 0.00 Total Points: 856.58 | Lunch help.... I work a 12 hour shift, I usually go to lunch around 12 (my shift is 7a-7p). Most days I'm hungry (tummy grumbling hungry) again by 3:30. Probably beause I don't eat what I should. Does anyone have any suggestions as to things that are easy to prepare, but are filling enough that I won't be hungry 2 hours later? I like some of the frozen entrees out there, but most are super high in sodium - and even though I like salt, I don't like that much! Also, any ideas for snacks would be wonderful - I work in an ER, so I need things that are quick to eat - so I'm not eating in front of patients or have food on my desk, ect.

Points: 783.52 Bank: 0.00 Total Points: 783.52 | If you have a toaster oven at work, you could make this up ahead of time and just heat it up: 1 portabello mushroom, sprinkle it with garlic powder/salt, smear on some tomato paste (I have recently found some in a tube so you can just use as much as you need without having the rest of the can left over), sprinkle with some mozzarella cheese - you could also add turkey pepperoni or some other topping. Broil for about 5-7 minutes until the cheese melts.
Lettuce wraps: Get a bunch of lettuce with big leaves like red leaf or green leaf. Take some grilled chicken slices (you can grill the chicken a day or two before with whatever marinade or seasonings you like); red (or yellow or orange) pepper strips; 1 wedge of Laughing cow cheese; whatever other toppings you might like. I usually cut up/prep all the ingredients before I go to work. I keep them in separate little baggies or pack them in a tupperware with paper towels in between. When you get ready for lunch, just break it otu and start building your lettuce wraps. Usually 1 good size chicken breast will give you about 2-3 slices per wrap for about 3 wraps. This is really filling for me. You could also do it with deli lunch meat if you don't want to use grilled chicken.
For some easy snacks that will keep you full try to do a combination of carbs and protein like: an apple with a slice (or stick) or cheese; fruit with ~15 almonds; cottage cheese with a piece of fruit; hummus with crackers/carrots/celery/pita chips/Terra chips etc. I find that having some protein with a carb will help me stay feeling full longer.
Also, if you're in a hospital and there is a nutritionist or diabetes center...go by and see if they can give you some tips.

My favorite is the classic can of tuna with a little mayo (sometimes with a little cheese melted on it in the microwave) or the leftover meat from last night's dinner |

They need to be kept cool, but they have enough meat and whole grains to keep you fuller longer. I would suggest throwing in some extra cheese and nuts which also will keep an appetite at bay longer.
