When I'm in a pinch I use a Zesty Italian Salad Dressing or a mix Lemon Juice/Oil/Herbs.
Of course it depends on what I'm marinating what herbs I use.

there is an awsome marinade by soy vey.... its called chinese marinade..... its a bit thiner then BBQ sauce but if u use a decent amount of it and let it soak in over night the taste is unbelieveable and if you brush it on while cooking/BBQing you get a nice glaze too.

to make veggies more palatable w/o the fat, I mix together apple cider vinegar and extra virgin olive oil, add in cucumbers and tomatoes, and let it soak up, it is really good, imo.
