Default Meatloaf?

My husband LOVES meatloaf but I haven't made it in so long because of not wanting to eat bread crumbs...I saw a low carb recipe that used oatmeal (like the plain not instant kind) instead of bread. Has anyone tried this? I was thinking it might be ok...The bread crumbs are there more to hold it together right? I might try it

My mother always used an egg and oatmeal to bind her meatloaf. The relatively small amount of carbs in bread crumbs, semolina flour, oats or other binders isn't really something I'd concern myself with, unless I was going strictly carb-free, but then the oats would be out too.

I've heard of it being made with oatmeal, but have never tried it. I don't think the bread is just to hold it together, it's more for texture "loaf" ...otherwise it's just a hunk of meat. I've been making it occasionally with a little low carb bread....like weight watchers brand. Then use chopped veggies to fill in for less bread.....like mushrooms, green peppers, zuccini, tomatoes. Sometimes I mix in tomato, pizza, or spaghetti sauce, sometimes I put it on the top. For lean meat, an egg will help hold it together, but I don't use that anymore. Good luck. If you try the oatmeal, let us know how it is.

I use oatmeal in my meatloaf and it is very good...You can also use parmesan cheese it gives the meat a really good taste.

I'm going to try it tomorrow....I'm armed with 2 lbs of 93% lean meat and 100% whole grain oatmeal! The parmesan cheese is a good idea for alittle laste too! I usually put ketchup in mine cause that's how my mom made it....

My family has always used oatmeal - I actually prefer it over breadcrumbs. And we use ketchup too (mixed in and smeared on top).

Instead of ketchup, I've used A1 sauce with great results. It's a bit tangier and really boosts the taste.

I like to make my loves in muffin cups. That way I can freeze them individually for leftovers.

My dh loves meatloaf. I have made mine before with both oatmeal and bread crumbs and can't really tell the difference. I like to put mine in hallowed out green/yellow/red peppers and/or onions - kind of my take of stuffed peppers. Yum. Also for a trick - I bake mine up on a rack so it doesn't sit in the grease while it cooks. Hey - whatever we can do to lower the levels I guess.

I love using parm cheese instead of breadcrumbs! I also throw in other stuff....I made a feta cheese and mushroom meatloaf once...a spinach and rice filled one once...you can put almost anything you'd like into it! Case and point: Where my DH is from, they always make their meatloaf w/ whole hard-boiled eggs in the middle

Well, don't know how 'low carb' this is, but thought I'd share this really yummy meatloaf recipe with everyone!

2 lb ground beef
1 jar salsa (hot or medium depending on your preference)
1 can black beans (omit if you're not a bean eater)
pepper jack cheese (you can also you regular jack or cheddar if you dont like pepperjack cheese)
broken up tortilla chips

tortilla chips take the place of the bread crumbs and use as much/little of cheese as you like! It's always a big hit with everyone in my family! ENJOY!!

here's what I do! Instead of bread crumbs, I use 3 or 4 slices of whole wheat bread, cut it up or break it up into small pieces and mix it with your eggs and meat ( and I also mix in a little ketchup and garlic powder and italian spices) and bake it, the bread gets kind of mushy and it is SO good, makes for a more "fluffy" meatloaf instead of it being like a brick.
