Morrocan chicken w/whole wheat couscous This stuff is the bomb! I got the recipe from Oprah magazine and it came out great!
What you need:
8 chicken thighs with skin
olive oil
cumin, salt, pepper
1/4 cup of fresh mint leaves
2 cans of fat free or lowfat/low sodium chicken broth
I bought Fantastic Foods brand 100% whole wheat couscous
Rub the chicken thighs with cumin and a generous amount of salt and pepper
In a high sided saute/frying pan, cover the bottom of the pan with a light layer of olive oil and heat the oil
Brown the skin on both sides of the chicken in the oil and then add a can of chicken broth.
Bring to a boil and then cover and bring to a medium-high simmer for 20 minutes.
Add the fresh mint and cover- let simmer for another 20 minutes
While you are simmering the chicken, prepare the couscous according to the directions, but use chicken broth instead of water.
Put the couscous on a platter or serving dish and put the chicken thighs on top.
Leave the juices in the pan and turn the heat up so the juices thicken up
Top the chicken and couscous with the gravy and put some mint leaves around the platter to be decorative
