My fav low fat recipe: Linguini with bacon,lettuce and sundried tomatoes Linguini with Bacon, Lettuce and SunDried Tomatoes

Cooking time: 10 minutes
Serves 1
2 sun-dried tomatoes, chopped (or you could use fresh tomatoes)
85g (3 oz) dried linguini
2 sprays of oil
2 baby onions or shallots, finely chopped
2 lean back bacon rashers, cut into strips
Large handful of lettuce leaves, thinly shredded
Drop the sun-dried tomatoes into a small bowl and pour over 3 tbsp boiling water. Leave to stand.
Cook the pasta in plenty of salted boiling water, following packet instructions.
Meanwhile, spray a small non-stick frying pan lightly with oil and tip in the onions and bacon. Cook over medium heat for about 5-8 minutes, stirring occasionally, until soft and golden brown. Stir in the tomatoes and their water.
Drain the pasta and toss with the bacon mixture and the lettuce until thoroughly mixed. Serve immediately.
This recipe can be multiplied to give extra servings.
