Default My Killer Beef Stew...Yummmm, I make it for dinner once a month!

This is what you need:

2 pounds beef ( stewing beef/Beef chunks) - I always cut them smaller too...
4 Carrots cut thick on an angle
4 Celery sticks Cut thick aswell, same as above
1 -2 Parsnips cut into big bites
2 Onions - I red (My favorite) I cooking - chop into small dices...
2 cloves of garlic (almost pureed)
Optional - I red bell pepper...I add it, just for the color...thick pieces...

And last but not least, potatoes.....good old starchy ones...hehe - I use 4-5 big ones....cut into chunks.

Now for seasoning:

2 cup's red cooking wine
3 - 4 heaping Tbsp paprika
2 - 3 Tbsp of Cumin
1 Bay leaf
3 beef boullion cubes
Salt & pepper to taste
5 tbsp tomato paste
add water to cover...

Ok, here's what/how I do it:

1) In a large pot ( with Lid) turn stove on to medium, & start to fry to onions & Garlic, then add meat until it's brown all around...

2) Add Bay leaf & 1 beef Boullion cube and just enough water to barely cover the meat...let the meat cook like this for 50-60 mins.

3) Add all the veggies, except the potatoes - add the rest of the ingredients (wine, tomato paste, boullion, cumin etc..) and water accurately & cook it again for an additional 45 mins....

4) Add the potatoes, cook for another 35-40 mins...taste & add salt & pepper according to taste

5) Eat it!!!!!

On the side I throw together a romano cheese & basil salad....
1/2 Head lettuce/1/2 red leaf lettuce...1/2 pint cherry/grape tomatoes...sliced thin red onion, fresh basil, few cucumbers chopped...Oil & vinegar dressing ( you can buy the kraft one) & last - tomatoe & romano cheese croutons....

This is a delicious meal...& if you really want to go all out, buy some italian or french stick bread.

Sounds good! I am going to have to put this with my recipes and try it out one day. Have you ever tried cooking it in a crock pot? If so how long and what do you put in first? I always use my crockpot for stews or soups most of the time. Just wondering if you have ever tried it that way. Thanks for sharing it with us!

Great now I am hungary again. Oh yeah that is not hard. I am always hungary.

Thanks for the recipe I will have to give it a try. I really like beef stews. But I thin k I will cheat and use my pressure cooker to make it.

Yes, cooking it in a crockpot/pressure cooker is great too....Just cook the meat a bit first, then add everything else & let it go for a few hours....

Glad you like the recipe....

BTW: Does anyone have a good lamb stew recipe?
