Default Need ideas for low Gi or Carb replacements

I am a carb fiend. There! I admitted it! So the transition to a diabetes friendly diet has been difficult...I've been trying to get my carbs from veggies and such, and the occaisional small serving of a low-medium Gi carbs (ie. wholegrain pasta) but there are times when I think I just can't look at another salad.

So I was wondering if anyone had any low Gi substitute ideas? So far the only thing I've been able to come up with are a miniscule serving of wholegran spaghetti or cous cous...and even those are medium Gi! Help!

Instead of baked poatoes, I eat baked sweet potatoes with butter and Splenda (some restaurants offer this now). Instead of potato chips I eat taro or sweet potato chips or deep fried apple chips. I use no sugar mayo (Dukes). You can use different nut flours which are lower carb. I posted a recipe on the Food board for almond flour cake with low carb icing. I make oatmeal & stone ground whole wheat flour cookies. I also make my own pancakes for STWW flour. I use whole fat dairy, eat fruit when I want and try new things when I get in a food rut. HTH
