Default Need some vegeterian recipes

I am not a vegitarian, however, I am a minimal meat eater, and DH and I try to stay away from pork as much as we can, though it's hard at times, and I hate beef most of the time. I was wondering if anybody had any great and healthy vegitarian recipes. Veggies, tofu, soybean, black bean, things like that. DH isn't thrilled about all that stuff, but if I get good recipes I think he would like it.

I would love to find some vegetarian recipes as well (I am actually a vegetarian) and am have a lot of problems. I went to all of the sites listed above and found very little. I'd like to think that I can still use most of the fake meat products, but most of them are loaded with carbs. I'm absolutely depressed about it because I am just now going back to low carb... and it is turning out to be so difficult that I am getting frustrated.

Heather-

I'm also a vegetarian and where I live there aren't a lot of the meat alternatives easily found in the States. Three low-carb "meat" options I turn to often are tofu, TVP, and homemade seitan.

An alternative to a low-carb approach is the GI diet, where you match all portions of carbs to protein, and thus high-protein meat alternatives that still have carbs in them don't have to be eliminated from your diet. Overall, a low carb approach doesn't work as well for us vegetarians (since we don't have meat to rely on). The best thing to do is eat smart carbs.

Personally I tend to use Boca and or Morningstar products. They have veggie crumbles that are similar to ground beef. I'm used to the taste so I like them.
Maybe try a few but they are also high in sodium to make up for the lack of "meat taste".

Other than that I am cooking fish and various seafood.
