Question Need soup recipes

Hello~

I'm starting my low carb journey on Friday and I am in need of soup recipes. Weight Watchers had their 0 point soup that people could eat whenever they needed that full feeling. Are there any good soup recipes that are low carb?

Try www.allrecipes.com. They have great stuff! I don't low carb- so I don't know if they have that but you can check it out.

I would think that most vegetable soups are low carb, so long as they aren't heavy with potatoes, or loaded with rice or pasta. Allrecipes is great, because they give you a nutritional breakdown of the recipe, and you can scale the servings to suit your needs.

there are a couple of vegetable soup recipes in my post 10 New Ways with Vegetables!

and I have posted the nutritional count of veggies over on the Diet and Exercise board if you want to check the carb counts

Hi KitchenWitch

My mom found this recipe, it's a Weight Watchers one, so it should be good to go. It's quick, easy and nutritious. On top of that, it's really, REALLY good! Just pulling out this recipe from my files made me want to make it. My husband loves it, which is surprising, since he's so picky. I also gave a copy of it to my strictly vegetarian Hindu doctor and she loves it, too. Anyway, enjoy it!

"This Italian-inspired, meal-in-a-pot is rich in fiber-filled ingredients, like beans and vegetables. It's a tasty, vitamin-packed, meatless meal that cooks in no time, especially if you use leftover pasta. Sprinkle with Parmesean cheese and serve with a slice of bread and a salad."

2 (16-oz) cans Italian-style crushed or whole Italian-style tomatoes (finely chopped)

2 (19-oz cans kidney or cannellini beans, rinsed and drained

4 cups frozen mixed vegetables

5 cups cooked pasta or 3/4 cup dry pasta

6 cups water

Place all ingredients in a medium-size saucepan. Simmer for 10 min if using cooked pasta or until dry pasta is cooked. Add enough water during cooking to just cover the pasta.

Try it and let me know what you think. I promise you it's delcious!
