A low-carb diet is definitely a good mix with the gluc. How many carbs you should be eating a day really depends on the individual body and the diet you want to follow. Some are really strict and say no more than 30g a day, I could never do that. I am also insulin resistant and have started another version of low-carbing, the IR diet which lets you eat up to 30g of carbs every two hours (it's not a must to eat that many carbs, but you may), as long as you balance every 15g of carbs with at least 8g of protein.
So far it has been working for me, and along with regular exercise I've already lost some weight. Do you have to lose weight?
I would suggest reading more posts in this forum and also searching the research articles for diets that may appeal to you. If your doctor has not put you on a more specific diet than telling you not to eat any bread, you may find something here that will appeal to you and will be easy enough for you to follow. It really also depends on what kind of an eater you are, you know what I mean? Some people don't eat many carbs to begin with. I always have. I lived on carbs, and that's why the IR diet works for me. I don't feel deprived. Much.

And don't be nervous about the gluc. It's a good thing.
