Default ???from a newly diagnosed mommy with GD

I was just diagnosed with GD 3 days ago. I have to have 1 starch/1 protein/1 fat for breakfast, and the same exchanges 2 hours later. Can anyone suggest meal ideas? I am getting tired of having a scrambled egg on toast with butter every day, plus, I don't wan't to eat eggs more than 3 times per week. It is hard because I am having difficulty eating protein in the morning, I used to eat either cereal or oatmeal before the GD.

EDIT: I wanted to add that I cannot use milk/yogurt as a protein source per my nutritionist. The GD diet treats milk as a carb!

You could try peanut butter on toast. 2 TBSP of peanut butter counts as a protein and a fat and the toast would be a carb.

you could also eat leftover meat from dinner. I like to have a chicken or turkey sandwich for breakfast sometimes. When I do I use a little light mayo and count that as my fat.

Turkey bacon isn't too bad either.

I hope that helps. I find that if I vary what I eat from day to day it really helps.

Of course you may want to run these ideas by your nutritionist or doctor because I do not have GD (I am not pg) but I do have diabetes and this is some of what I would eat.
