I thought someone had posted this before, but when I went to search for it I couldn't find it. If you like Cheez Nips or any of those other cheesy crackers, or you are just craving something crispy and salty, this is PERFECT.
easy, easy, easy
1.Grab that big old hunk of cheese outta the fridge.
2. Cut of about a 1/4 inch slice and cut that slice in half to make square pieces.
3. Place on a microwave safe plate, I put parchament paper on mine to make it easy to peel off. But you can just put it on the plate because you peel them up before they could stick.
4. I microwaved 4 pieces on high for 1 minute and they where perfect. But I would play with the times as we all know microwaves vary. Just watch for them to get bubbly all through the middle and get a VERY slightly brown color.
5. Peel them up and let cool for 1 minute. They get crispy and lacy and they were perfect.
I used sharp cheddar and they were fine. I also tried a pre-wrapped slice of american cheese which didn't get as thin and lacy and which was much saltier, but will do in a pinch. I bet you could use almost any cheese that is your favorite.
You can also spice them up before you cook them, although I would avoid salty toppings.
I also saw on the net that you could do it on the oven at 350 degrees. Maybe slap some pepperoni on top as soon as you pull them out of the oven.
Well anyways, I loved them and I am sure they will help get me throught those cravings with NO CARBS! Yipppeeee! LOL

Just a little addition to this post. DON'T try it straight on a paper plate, they become one with the plate
And when you do it, it sort of cooks out the fat/grease and that gets WAY HOT in that one minute in th microwave. Be careful.
I just ate 6 "crackers" for dinner.lol

I never tried it that way but it sounds a bit easier than the way I was doing it
The recipe I had gotten was take grated cheese and a non-stick skillet. Cook the cheese until it was bubbling and flip it over and cook that side until it's firm. Blot on a paper towel and viola! a cheese cracker
I usually have mine with tuna or chicken salad...yum!

Hey this is a great idea! My mother does this too. She uses a whole slice of provolone cheese and crisps it up in a pan on the stove. It comes out flat, round and crispy. She then uses it as a taco shell for low carb tacos and tostadas. It tastes really yummy all loaded with taco meat, shredded lettuce,avocado, sour cream, etc.
