Here is a link to a page that has some info about the insulin levels during a glucose tolerance test you may find helpful (and yes, insulin levels do go up after eating, as you will see in the normal lab ranges for insulin following the glucose challenge test): http://www.fertilityplus.org/faq/hormonelevels.html
Scroll down to the Glucose Tolerance Test With Insulin. You will see, for example, that normal insulin levels on fasting are <10; one hour after drinking the glucose solution, the normal leve is 50-90.
