Your gyn probably isn't the best person to sit down and talk to about all of it. That's not her specialty and while she probably has basic medical knowledge of it, your best bet is to make an appointment with your primary care physician, have an A1c done, get a referral to a diabetes education class (even though you aren't diabetic you'll learn TONS there) and ask for a prescription for a glucose meter so you can keep checking yourself every so often for changes in your blood glucose.
Another referral you would want to ask for is for a dietician, if there are any good ones in your area. Like anybody else, there are good ones and bad ones. I had a good one and learned a TON about how to eat and how much to eat and how the body works.
