Default O/T Anyone have some good Hawaiian Luau type recipes?

I'm hosting a surprise 80th birthday for my Grandmother this July. Since her favorite place in the world is Hawaii we are using it as a theme. I've gotten some great decoration ideas and drin ideas but I'm kind of at loss for menu ideas. I was thinking we would grill so usuall cookout foods plus maybe some teriyaki chicken breasts. Does anyone else have any suggestions. I do have a great ambrosia salad, and it includes pineapple and coconut so that will work, right? Help!

You could grill shrimp and make a pina coloada sauce for dipping. Fish is very Hawaiian as is spam. You could make fried eggrolls and won tons stuffed with cabbage, spam, carrots and cucumber (its really good). Huli Huli chicken is very hawaiian. Do a search on google for it, it is so good!

I have had great success with the recipes on http://www.allrecipes.com

Be sure to read the reviews of the recipe because there's usually good hints in there.

We always called this Pina Colada Cake, because it reminded us of the drink. It doesn't have pineapple in it though, only coconut. Hope you enjoy it! It is a huge hit with our family and friends at summer parties or luau.

Pina Colada Cake

1 yellow cake mix
1 can sweetened condensed milk
1 can cream of coconut (found in liquor section of store)
1 (12 oz.) tub of Cool Whip
Shredded Coconut

Bake cake mix according to package directions in 9 x 13 glass dish or baking pan. Cool. Poke holes in cake. In bowl mix together sweetened condensed milk and cream of coconut. Pour over cake. Top w/ Cool Whip & sprinkle with shredded coconut. Cover with foil and freeze. Thaw approx. 20 mins. before serving. (cake should be very firm & cold)


Another great recipe is for Fruit Crush Punch. It has fruit, juice and ginger ale and is a "slush" type punch. Absolutely yummy!

Fruit Crush Punch

3 cups water
2 cups sugar
1 (46 oz) can Pineapple juice
1 1/2 cups orange juice
1/4 cup lemon juice
3 bananas, mashed
3 qts. Ginger Ale

Mix water and sugar together in sauce pan, bring to a boil. Remove from heat and stir in all juices and bananas. Freeze in gallon jug. Thaw for several hours. Break open jug and place in punch bowl. Pour chilled Ginger Ale over the fruit juice mixture, stirring and breaking up to make "slush". Once well mixed it is ready to serve. (you can also add pineapple tidbits if you wish)
