Lately I have been hungry for omelets but I need some ideas for some new ingredients. I have been using chunks of ham, pieces of green pepper and cheddar cheese. Of course, I call it on omelet, but really it's scrambled eggs with the other omelet ingredients! I'm just wondering if anyone else has any ideas or things they have tried because I'm getting really tired of these same things over and over again!

Shredded sauteed cabbage (be forwarned that cabbage and eggs can provide some awsome firepower, if you know what I mean)

"An Italian OMELET that usually has the ingredients mixed with the eggs rather than being folded inside, as with a French omelet. It can be flipped or the top can be finished under a broiling unit. An omelet is cooked quickly over moderately high heat and, after folding, has a flat-sided half-oval shape. A frittata is firmer because it's cooked very slowly over low heat, and round because it isn't folded."
An omelette is "a mixture of eggs, seasonings and sometimes water or milk, cooked in butter until firm and filled with various fillings such as cheese, ham, mushrooms, onions, peppers, sausage and herbs."

My favorite omelet is bits of tomato (I just use a few grape or cherry tomatoes cut in teeny pieces), minced onion, and as much minced serrano chile as I'm in the mood for, usually a half a chile...it's so yummy. I cook the onion and tomato for a couple minutes in a little oil or butter, then add the chiles and throw the egg and a little salt on top. I guess mine is a fritatta too, not an omelet.
Hmm, an egg-related memory. Back in 7th grade home ec, I flunked the egg unit because I made a fritatta, not an omelet. Well, pooh on you, Mrs. Prigge! Tasted the same to me.
my favorite omelet ingrediants (NOT healthym but...) are colby jack cheese, black olives and crispy bacon! SO DELICIOUS!
