 Orange Bran Flax Muffins!
These are yummy for those looking for something for breakfast - high in omega-3 because of the flax!
1 1/2 cup oat bran
1 cup all-purpose flour
1 cup flaxseed, ground
1 cup wheat bran
1 tbsp baking powder
1/2 tsp salt
2 oranges, peeled, quartered and seeded
1 cup brown sugar
1 cup buttermilk
1/2 cup canola oil
2 eggs
1 tsp baking soda
1 1/2 cup raisins, craisins, whatever dried yummy you can find.
In large bowl combine oat bran, flour, flaxseed, wheat bran, baking powder, and salt. Set aside.
In blender or food processor, combine oranges, brown sugar, buttermilk, oil, eggs, and baking soda. Blend well.
Pour orange mixture into dry ingredients. Mix until blended and stir in raisins (etc.).
Pour into prepared muffin tins (lined or sprayed) and bake at 350 degrees for 18-20 minutes. Makes 24 muffins.
