Pan-fried Apples I just made fried apples to go with breakfast, and they were fabulous. I used brown sugar back in the day, but things have changed! To restrict fat, for those who are interested, you can cut the butter down to just a few tablespoons. If you don't have or use splenda, you can add a different sweetener as the cooking is finishing, because too much heat destroys the sweetness of some brands. Date sugar is ground dehydrated dates and adds to the "brown sugar" taste, but it isn't neccessary.
Pan-fried Apples
6 large gala, roma, or other apples
1 stick (1/2 cup) butter or less
1-2 Tablespoons cinnamon
1/2 teaspoon cloves
1/2 teaspoon nutmeg
dash of salt
2 Tablespoons date sugar, optional
(substitute 1 T. molasses, if you like)
6 packets splenda
Cut apples into bite-size pieces. Only peel them if you must. Melt butter in a large skillet, add remaining ingredients, and cook over medium heat until tender and syrupy, approximately 25 minutes. Serve warm. Makes 12 servings of 1/2 cup each. Great leftovers!
