No recipes. We eat ours sweet, but I thought I'd add a little trivia...

Quote:
Ever wonder why we eat pancakes on Shrove Tuesday, or what Shrove Tuesday even means?

In the Christian calendar, Shrove Tuesday is the English name for the Tuesday before Ash Wednesday, which in turn marks the beginning of Lent.

The origin of the name Shrove lies in the archaic English verb "to shrive" which means to absolve people of their sins. It was common in the Middle Ages for "shriveners" (priests) to hear people's confessions at this time, to prepare them for Lent.

Pancakes are eaten to use up milk and eggs, which were not traditionally eaten during Lent, and thus would otherwise spoil during this period.

I'm not sure if this is what you're looking for, but this is my favorite pancake recipe:

Sour Cream and Cottage Cheese Pancakes (lower carb)

Ajani, thanks for the bit of history. I wondered about that myself.

Default Pancake lovers alternative

I use to be a pancake lover, but stopped eating them after I was diagnosed. I switched to crepes years ago and do not miss the bready pancakes. I fill the crepes with a variety of fruits and dream whip, or shaved ham or light sausage and roll them up. They are soooo good!

Crepe Recipe:
1/2 C. Flour
1/2 C. Wheat Flour(fine ground)
dash salt
3/4 C. cold water
4 eggs
3/4 C. skim milk
2 T. Margarine

Sift flour and salt into bowl. Add water gradually, whisking constantly. Add eggs one at a time; add milk, stirring vigorously until batter is smooth. Melt margarine and add to batter. Let set 1 hour. Heat griddle or pan and spray lightly. Ladle 3 tablespoons batter and tilt to cover pan. Cook 1 minute or until brown, turn and cook 15 seconds. Leftovers may be frozen.
