Pancake lovers alternative I use to be a pancake lover, but stopped eating them after I was diagnosed. I switched to crepes years ago and do not miss the bready pancakes. I fill the crepes with a variety of fruits and dream whip, or shaved ham or light sausage and roll them up. They are soooo good!
Crepe Recipe:
1/2 C. Flour
1/2 C. Wheat Flour(fine ground)
dash salt
3/4 C. cold water
4 eggs
3/4 C. skim milk
2 T. Margarine
Sift flour and salt into bowl. Add water gradually, whisking constantly. Add eggs one at a time; add milk, stirring vigorously until batter is smooth. Melt margarine and add to batter. Let set 1 hour. Heat griddle or pan and spray lightly. Ladle 3 tablespoons batter and tilt to cover pan. Cook 1 minute or until brown, turn and cook 15 seconds. Leftovers may be frozen.
