I've been tinkering for months, and I think I've finally perfected this recipe.
I think these should now be re-titled PCOS BLASTER MUFFINS.
They contain both farinetta and soy lecithin, super-high in d-chiro-inositol (and the lecithin makes the muffins light and fluffy, what a bonus!), as well as lots of cinnamon, also rumored to help regulate insulin levels, and flaxmeal, high in EFAs which are also supposed to help regulate hormone levels, among other benefits.
Oh, and I think they taste really good! I eat them warm with a little butter. (they are whole-grain muffins, tho', please don't expect a cupcake).
TWO muffins contain:
50g farinetta, 9.75g lecithin
890mg d-chiro-inositol (685 from farinetta; 205 from lecithin)
35g carbs (18 from farinetta; 4 from blueberries, 13 from bananas) - this doesn't include non-digestible fiber carbs
8.3g fiber from farinetta (more from flaxmeal; haven't calculated)
18.5g protein from farinetta
PCOS Blaster muffins
2 ½ c. buckwheat farinetta
½ c. soy lecithin
1 T. baking powder
1 t. sea salt
4 t. cinnamon
1/2 c. flaxmeal (or fresh-ground flax seeds)
3 mashed bananas
2 T. brown rice syrup
4 ½ t. stevia plus FOS (spoonable stevia, not the pure extract)
2 eggs
¾ c. water
3 T. cold-pressed oil
2 t. vanilla
1 ½ c. blueberries
Mix dry ingredients. Mix wet ingredients, including dry stevia. Add wet to dry ingredients and mix with fewest possible strokes.
Bake at 375 deg. For 25-30 min. Makes 12 muffins.

I was a complete & total muffin ADDICT before starting to low carb. It's common knowledge among all my friends that I adore muffins; they are my biggest temptation.
I have missed them soooo much!!!
I can't weight to try your receipe but one question... some of the ingredients look usual & I don't know where to find them??

Most of the ingredients (flax meal or flax seeds to grind, soy lecithin granules, brown rice syrup, stevia) can be bought at a health food store (like Whole Foods or Wild Oats).
The "weirdest" ingredient is also one of the most important - the farinetta. That you have to buy from the supplier. Go to:
It's pretty expensive, but less so if you look at it as a nutritional supplement rather than a bag of flour. Also, even besides the DCI, this stuff is AMAZINGLY good for you... check out the nutritional profile:
I tried to make these muffins, and placed an order from www.mindak.com - apparently I can't read.... I looked on the order form, and they sell hulls, groats, kasha and farinetta. Then, I got distracted, and just looked to buy the biggest bag possible.
WELL, I just bought a 20 lb bag of buckwheat hulls!!! They came, and I thought they were awful to chew - it's like the bits of popcorn that get stuck in the back of your teeth. I made a batch of muffins with the hulls, and the hulls didn't soften any in baking - I forced myself to eat one, hulls sticking in the back of my throat..
I checked out this web page again, saw that Mindak was the right supplier, and just to double check, I clicked on the order form to discover I had the wrong product!!! So, now I ordered the farinetta CORRECTLY this time!!!
My husband laughed so hard at me....I guess we're going to make some buckwheat hull pillows with all these buckwheat hulls that we have....
Anyway - just wanted to share. Oh, and I called every health food store in town first looking for the farinetta - they were already pretty rude about it: "HUH???? What is THAT???"
We should spread the word more!

Buckwheat hulls, as I'm sure you know now, are not meant to be eaten at all, they're the waste! (like peanut shells) . But of course you can use them to stuff pillows, and they also make great garden mulch (you can buy them at garden stores for that purpose) - in case you're wondering what to do with them all...
I'm sure you will be *much* happier with the farinetta!It's a flour, not crunchy in the least! :-)

Groats are a part of the flower of the plant that is eaten.
Kasha is roasted buckwheat groats (yummy!).
Farinetta is flour made from the most nutritional part of the flower (like bran from wheat)
Hulls are the outside part of the flower that is not eaten (like peanut shells, or if we're going to stick with the wheat analogy, the chaff)
Kashi is the brand name of a line of foods that include breakfast cereals and nutritional bars that do not as far as I know even contain any buckwheat, and if they do it's miniscule.

Erin corrected my typo of kashi/kasha, sorry about that.
Hey you know what though? Most (not all) of Kashi products do contain buckwheat though. Maybe that's why I made the typo....was thinking of the cereal.
A lot of people not as buckwheat-obsessed as I am get the kasha/kashi thing confused.
Kasha has been my favorite food since I was a child - so when I found out buckwheat could help my PCO, I was ecstatic!
But I want to mention that kasha (the roasted groats), much as I love it, has a much smaller concentration of d-chiro-inositol than the farinetta (the bran flour).
BTW, when I get tired of the muffins I've taken to mixing a bunch of the farinetta into Banilla yogurt, along with some ground flax,sesame,sunflower and pumpkin seeds and some protein powder. Actually quite yummy - kinda pudding like.

Try looking in the health/natural section of larger grocery stores too. Soy products are readily available in most of the stores in my area, but I couldn't find stevia until I went to Kroger.
Does Kroger carry stevia? I wonder if the one here does? I want to make some of these but will need to make a trip to Wild Oats or somewhere to get some of this stuff (but I will make sure to get farinetta, even if I have to order it!).
