Do you have any other conditions like endometriosis? It just sounds like a hysterectomy is such an extreme way of solving things. Maybe you could get a second opinion from another doctor before you make your final decision?
The ovaries are only one of three organs that produce androgens so I don't think it would make an extreme difference on insulin resistance if you had them removed.
