Pork Chops w/ Apples & Thyme Servings: 4

Cooking Time: 11 mins
1 tbsp butter
4 (1/4 inch thick) pork loin chops (1 lb)
8 fresh thyme sprigs (substitute 1 tbsp dried thyme leaves)
1 medium (1/2 cup) onion, chopped
1 (1 cup) red and/or green apples, cored, unpeeled, thinly sliced
1/4 cup apple juice
1. Melt butter in 12 inch skillet until sizzling; add pork chops and thyme. Cook over medium-high heat, turning once, until pork is no longer pink (8 to 10 mins). Remove from skillet. Keep warm.
2. Add onion & apple slices to same skillet. Cook over medium heat until just tender (2 to 3 mins). Add apple juice, scraping bottom of pan to remove cooked bits, continue cooking until heated through (1 to 2 mins).
3. To serve, pour sauce and apples over chops.
