Hey I thought we could all post our favorite recipe here and create a cookbook kind of. Here is mine it only have 265 calories in it.
1 lb. boneless chicken breasts,
skinned and cut in strips
1 (2 1/2 oz.) jar sliced mushrooms,
drained
1/2 c. Wish Bone lite Italian dressing
1/4 c. chopped onion
2 tbsp. diet margarine
1 med. zucchini, sliced (2 cups)
1 lg. firm tomato, cut into wedges
6 slices Borden's Lite Line
pasteurized cheese product, cut
into small pieces
In shallow baking dish, place chicken with mushrooms. Cover with Italian dressing. Marinate for 30 minutes. Drain; reserve marinade. In large skillet, cook onion in margarine until tender. Add chicken and mushrooms. Cook, covered over medium heat until chicken is tender. Add zucchini, tomatoes and reserved marinade. Cook and stir until zucchini is tender. Remove from heat. Sprinkle with cheese product. Cover and let stand for 2 minutes or until cheese begins to melt. Makes 4 servings.

Oil-and-vinegar Dressing: these are proportions not exact measures
2 tablespoons olive oil
1 teaspoon each balsamic, apple cider, and seasoned rice vinegars
1 teaspoon crushed garlic or garlic powder
1 teaspoon mustard
oregano, salt and pepper to taste
Mix well before serving.
This is a zucchini dish I learned from a family friend. I don't measure exact proportions, but here's my estimate:
5 medium zucchini (for a family of five)
1 tablespoon olive oil
1-2 tablespoons minced shallots or scallions
Whatever herbs or spices you desire
Shred the zucchini in the food processor. Then, a handful at a time in a towel, squeeze the excess moisture out of the zucchini. Saute in the olive oil with the shallots or scallions, then season however you like.
I hated zucchini until I tried this...it was really yummy. You can substitute butter for the olive oil if you like.

When I was younger people used to tell me I had the body of a dancer. Well, I don't anymore. I have the body of a goddess.
Mine is so simple:
just take a bag of frozen veggies (the mixture is good, and choose the bag which has a low-carb veggies in it). Some mushrooms, and boneless chiken breasts.
Cut the mushrooms and chicken. Toss them to the pann. Add herbs ans spices you love (I like garlic and chilli-powder in mine). Cook untill almost done, add the veggies. After some minutes, healthy, jammy and quick dinner is ready to be eaten. If you love tomatoes, you can add some sliced tomatoes also with the veggies.
