Question Potato Alturnitive ?

I was watching a cooking show this weekend on Foodtv and the chef (Famous can't remember his name) used the celery bulbs as an substitute for creamed potatoes. Has anyone else heard of this? He said as he was doing it that the celery bulbs were less starchy. Would this mean less carbs? He then mixed the creamed celery bulbs with small portion of creamed potatoes. Would this be a good thing? Has anyone tried this? Very curious.......

Celariac, or Celery Root, is a bulbous root, not part of celery plants at all. They are less starchy than spuds, and have a mild celery flavour. Hubby likes it raw. I haven't mashed it at all, but it does work when cubed and added to soup instead of chunks of spuds. It can also be roasted along side meat just like potatoes.

Lightbulb Mock Mashed Potatoes Recipe

Mock Mashed Potatoes

1 head cauliflower (chopped, cooked, very soft, florets only)
3 ounces cream cheese
1 tablespoon butter
salt and pepper to taste

Mash, whip with a mixer, or blend in food processor.
Cook up cauliflower (boil or steam), drain well & pat dry with
clean kitchen towel. Mash. Add butter, heavy cream, salt and pepper
to taste.

Makes 6 servings
3g Carbohydrates per serving

I have not tried this recipe as of yet, but plan on trying it as soon as I am brave enough! Has anyone else tried it?

My family loves real (not instant) mashed potatoes and I am afraid that they will hate these. Maybe I could make them "regular" mashed potatoes and the "mock" ones for me? Sounds like a lot of extra work, but what is a girl to do?

the mock potatoes are good... if you like cauliflower...

it looks like mashed potatoes which i find is 1/2 the battle...

mix some cream cheese in it too for smoothness... do not try and just use a hand blender.. you need a food processor to make it the consistance.. you can add sour cream and chives too.. with some bacon bits... heavenly

if you do not like cauliflower.. do not bother with this recipe!
