hey cysters! my grandpa this year had a super-production of pumpkins (both the orange kind and the green type) and i dont have any idea about how to cook it eccept for the only two recipy i know- soup with or without lentils- and in the pan with oregan.. any ideas???

I make a great pumpkin pasta sauce... I usually cook by taste.. so I'll do my best with the amounts...
1 onion, chopped
1 red bell pepper, chopped
2 cloves of garlic, minced
2 Tbs olive oil
salt & pepper, to taste
2 c pureed pumpkin (canned or fresh)
1/2 c veggie stock
1/2 c cream, milk, 1/2 and 1/2... (whatever you prefer... I have used condensed milk in the past as well)
veggie stock (to thin sauce to desired consistency if needed)
parmesan cheese, to taste
Saute onion, pepper, and garlic with olive oil, until softened... season with a little salt and pepper. Add pumpkin and 1/2 c veggie stock... let simmer for about 10 minutes. Stir in milk and heat through... season with more salt and pepper if desired... add more veggie stock if it seems too thick of a sauce.. Add parmesan cheese to taste ( I love lots of it... you could also serve the cheese seperate at the table). Serve with whole wheat pasta... I usually use penne...
I have also sauteed up some turkey sausage (spicy) and mixed with the sauce... spinach is very tasty in it too... if you like spicy, add some crushed red pepper flakes with the onion and pepper...
I've also made cookies, muffins, smoothies... I LOVE pumpkin!
