Default Question for the diabetic/IR crowd...

How does this look for a typical day? I'm trying to watch my bad sugars and carbs because of gestational diabetes. I really want to eat fresh fruits and veg and am trying to work more in to my usual day.

today:
B~2 slices ham (they're small), scrambled egg (1 egg+1 egg white), 5 grape tomatoes and a small smoothie (no sugar, strawberries, blueberries, milk)
L~Tai chicken lettuce wraps (2, chicken w/ spices, romaine lettuce, thinly sliced carrot and scallion), mango
D~Turkey, gravy, mashed potatoe, peas

tomorrow:
B~Oatmeal w/ peanutbutter, milk
L~Salad w/ lettuce, grape tomatoes, thin sliced carrot, ham and cheese
D~1c chicken helper, roasted zuchinni

Have you done any looking for eating right because of gestational diabetes?

I am thinking that you need to be eating snacks between meals. I just finished reading the I-R diet and that is a major part of feeling okay and not getting your body into 'starving' mode.
