Quick Fish Pie
Preparation time: 10 minutes
Cooking time: 10 minutes
Serves 2
225ml (8 fl oz) skimmed milk
2 tbsp plain flour
15g (1/2 oz) butter
1 bunch spring onions, thickly sliced
200g can salmon or tuna in brine, drained and flaked, or mixed frozen seafood
Salt and pepper
2-3 French bread slices
1 tbsp finely grated mature cheese, such as Cheddar or Parmesan
Put the milk, flour and butter into a small saucepan and whisk well. Cook, stirring (with the whisk) continuously until the sauce comes to the boil and thickens.
Stir in the onions, fish and seasoning to taste.
Spoon the mixture into a warm shallow flameproof dish. Arrange the bread on top and scatter the cheese over the top.
Place under a hot grill until the cheese is bubbling and the bread is golden brown.
This recipe can be multiplied to give extra servings.
Can be frozen at the end of step 3.
