So...as I mentioned on the What's For Dinner? topic, I have some nights where I just don't have time for a real dinner. Some days lunch is an issue, too. So I figured it wouldn't hurt to ask, does anyone have some very quick, relatively healthy recipes? As much as I love Hot Pockets, they're just not cutting it. I was liking those Lean Cuisine/Healthy Choice paninis for a few days but my freezer is tiny, and I'm sharing it with a roommate who also likes frozen meals.

If I'm really pressed I'll go to the salad bar and pick up sliced peppers, mushrooms, spinach, onions, & other veggies and do a stir fry over brown rice.
But I try and go to the farmers market on Sat and purchase veggies and then prep them and keep them in ziplocs in the fridge so I can toss together stir fries, roast or make a salad. So I'll have ziplocs of sliced peppers, spinach, cucumbers, tomatos, etc
Packets, take sliced veggies/potatoes (slice thin) on a sheet of foil place a piece of fish or chicken on top season and seal to make a packet and place on a baking sheet in the oven and bake until done

Pinto beans (3 cans), Large can of diced mexican tomatoes, and mix with a packet of taco seasoning. Chop up romaine lettuce and crush up tostitos or baked cut corn tortillas and mix.
Vegan Chili- 4 cans of beans (kidney, pinto, black bean, or red)2 large cans of diced mexican tomatoes, 1 can of corn, packet of taco seasoning and a little tomato juice or V8. You can also add cooked pasta to it.
Cooked rice, jar of sweet and sour sauce, and frozen stir fry veggies ( that have been cooked) mixed together.

one of my favorite quick lunches is bruschetta. I take a crusty bagquette (one I can almost wrap my hand around, so small in circumfrence) slice it in about half inc slices, rub with a cut piece of garlic and toast. Seed and cut up a tomato or two, depending on size and hunger, mix in a bowl with a drizzle of olive oil, some italian seasoning, and parmesan and top the bread. it's delicious. Also, you can prepare the tomato mixture ahead of time and let the flavors meld together.
