I simmer in chicken broth and add veggies... my son digs it and even my veeeery picky dad enjoys it. Good luck!

It's nothing like rice. It's kind of chewy, but awesome when cooked in broth.

Here's a great recipe for breakfast quinoa--I tend to make it when I'm sick of oatmeal. I got it from the blog 80 Breakfasts, which I apparently can't link to due to the fact that I've made fewer than 15 posts.
You can obviously adapt it by replacing the honey with stevia or agave, adding flaxseeds, etc.
Breakfast Quinoa Cereal (adapted from culinagraphy)
1 cup prepared quinoa
1/2 – 3/4 cup milk
1 teaspoon unsalted butter
1 tablespoon honey (or to taste)
Dried fruit and nuts (the amount depends on how chunky you want it and the kinds are up to your taste – I used a small handful of raisins, dried figs, walnuts, and pine nuts)
- Place prepared quinoa in a small saucepan with milk, butter, honey, dried fruit, and nuts.
- Simmer, stirring often, until thickened slightly...about 5 minutes.
- Garnish with extra nuts and honey if you want. This will feed one hungry person or two regular ones
We find that Quinoa takes on the flavour of whatever you put it with. We cook it in veg, chicken or beef broth and use it as a replacement whenever we would have brown rice...it's great with stir-frys! You do have to make sure that you rinse it well though...otherwise it can taste bitter.
I have noticed that the nutritional info on quinoa varies greatly by the brand. Apparently this has to do with how the grain in processed to remove a hard outer coating (washing vs rubbing). Some brands are very high in fiber (45+%) and protein while others are much less. I always try to find the higher value fiber kind in the stores. Quinoa seems to have a nutty flavor and slightly crunchy texture but goes well with anything I pair it with.
One of my favorite ways to make it is to cook it according to directions in one pot. In another pan saute a bunch of veggies (fennel, squash, broccoli, tomatoes, etc) and then mix the quinoa into the veggies and add a little cheese. I always make mine to be heavier on the veggies.
